Strawberry Chia Pudding

Ingredients

  • ¼ cup chia seeds

  • 1 cup unsweetened almond milk

  • 1 tsp nut butter (almond, peanut, or cashew)

  • 30g collagen powder

  • 30g MCT oil

  • 2 tbsp unsweetened Greek yogurt or heavy cream

  • A few drops of liquid Stevia (optional)

Toppings:

  • 2 tbsp fresh or frozen strawberries or blueberries

  • 1 tbsp mixed nuts


Directions

  1. Add all ingredients (except toppings) to a jar or shaker. Mix thoroughly.

  2. Let it sit for 2–3 minutes, then mix again well to break up any clumps.

  3. Cover and refrigerate overnight, or for a minimum of 2 hours.

  4. When ready to enjoy, give it a stir and add your toppings.

  5. Prep a few in advance! Store in the fridge for up to 2 weeks—perfect for busy mornings or healthy snacks on the go.
