Whipped Feta with Roasted Strawberries

Ingredients
For the Whipped Feta:
225g feta cheese, crumbled
115g cream cheese, softened
1–2 tablespoons olive oil
1 tablespoon lemon juice
Freshly ground black pepper, to taste

For the Roasted Strawberries:
2 cups fresh strawberries, hulled and halved
2 tablespoon ZuZanna’s Strawberry Jam
Freshly ground black pepper, to taste

Garnish:
Fresh basil or mint leaves, chopped
Additional olive oil for drizzling
Black sesame seeds (optional)


Directions

1. Preheat your oven to 180°C. 

2. Toss the halved strawberries with strawberry jam and a pinch of freshly ground black pepper in a mixing bowl.

3. Spread the strawberries on a parchment-lined baking tray. Roast for 15–20 minutes, or until softened and slightly caramelized. Remove and allow to cool.

4. Combine the crumbled feta, cream cheese, olive oil, lemon juice, and a pinch of black pepper in a food processor.

5. Blend until smooth and creamy, scraping down the sides as needed. If too thick, add a bit more olive oil to loosen the texture.

6. Spread the whipped feta onto a serving plate or shallow bowl, using the back of a spoon to create decorative swirls.

7. Top with the roasted strawberries, spooning them evenly over the feta.

8. Drizzle with a little extra olive oil and garnish with chopped fresh basil or mint.

9. Sprinkle with black sesame seeds for added crunch and depth, if desired.

10. Serve with your choice of low-carb crackers or toasted seed bread.
