This Keto-friendly Taco Soup is hearty, cozy a comforting meal and incredibly budget-friendly. Make a big batch - perfect for freezing.
Ingredients
- 500g mince meat (beef)
- 1 onion, chopped
- 1 red pepper, chopped
- 2 garlic cloves, chopped
- 500ml stock (beef)
- 400g tin tomatoes
- Salt & Pepper to taste
- Olive Oil
Taco Seasoning
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 teaspoon dried oregano
- 1/2 tsp paprika
- 1/ 1/2 tsp ground cumin
- 1 tsp salt
- 1 tsp black pepper
Taco Toppings
- Sour cream
- Grated cheddar cheese
- Guacamole
- Jalapeno (sliced)
- Lime slices
- Taco chips
Method
- Slowly fry the garlic, onion, and red pepper in olive oil over medium heat soft.
- Add the mince meat and continue to fry.
- Add the Taco Seasoning and fry for a further 5 minutes.
- Add stock and tomatoes and cook over a slow heat for 30 minutes
- Serve with your favorite Taco toppings.
